Bellini Passion White Tea Botanical taste like summer in a cup, when stone fruits are ripe and juicy, passion fruit flowers are in bloom, and sunflowers are being pollinated by the bees. It is also a time of summer parties and champagne brunches with friends.
Bellini Passion is botanical blend that reminds us of sweet prosecco and the light peach flavors in an Italian Bellini. This blend is a passionate marriage of high quality silver needle white tea leaves with sweet peach nibs, passion fruit pieces, and sunflower petals.
This botanical blend brews nicely as a warm tea, and because of silver needle white tea's higher caffeine content, is a great way to start the morning. As a cold-brewed infusion, this tea tastes even more like a cool Italian cocktail. Serve it in a champagne flute as a summer mocktail (see Brewing Recommendations).

White tea contains between 5-50mg of caffeine, depending on a few factors. This particular tea blend is made using Silver Needle White Tea, a tea that is made of the tips/youngest leaves. These leaves contain the most caffeine because caffeine is a natural pesticide that protects young, vulnerable leaves.

Brewing Recommendations
Serving Size: 4-6g of tea per 100ml (3 oz) purified water
Ideal Brewing Vessel: Ethoz Tea Brewer; Glass Lotus or porcelain easy gaiwan; Porcelain tea pot or gaiwan
Gong Fu Style: Boil water to 195F/90C and then wait for the water to stop bubbling before pouring the water down the inside of the brewing vessel, not directly on the leaves. Brew for 1 minute, replace the lid, and then pour the liquor into a gong dao bei (fairness pitcher) before apportioning into tea cups. Remove the lid of the brewing vessel to allow the leaves to cool between steepings. Flash brewing in this manner ensures this tea can be brewed up to 3+ times.
Western Style Brewing: Place 4 tsp (10g) of Bellini Passion in a glass Ethoz Tea Brewer or easy gaiwan. Pour 195F/90C water inside of brewing vessel. Steep the tea for 3 minutes before pouring into a cup. Tea can be steeped again one time.*
Cold Brewing: Place 4 tsp (10g) of Bellini Passion tea in a pitcher with infuser. We recommend the Ethoz Tea Brewer. Fill the pitcher with 450ml water. Refrigerate overnight.
*Adjust the brew time, temperature and leaf volume to fit your taste: A lower temperature increases vegetal flavor; a shorter brewing time decreases astringency; and a lower volume of leaves reduces bitterness.
