"Bruce Banner" GABA Green Tea
Bruce Banner GABA Green Tea is a beautiful display of curly green and brown tea leaves. This tea is picked pre-qingming, meaning before the spring harvest. The shoots are tender for a finesse to the palate and a smooth, creamy mouthfeel. The young leaves' fruity and aromatic elements impart flavor into the tea liquor. The liquor has a creamy, custard like sweetness with tangy apple notes.
GABA is created in a lab, much like green superheros. After the tea leaves are picked and allowed to wilt, they are bagged and vacuum sealed to undergo an oxygen deprivation-induced GABA oxidation. After many hours, the leaves are released from their vacuum-sealed bags and wok-roasted to stop the oxidation process.
GABA (Gamma-aminobutyric acid) is a neurotransmitter (chemical messenger) in our brains that blocks specific signals that cause anxiety, stress and fear. Drinking GABA tea is thought to produce a calming effect and slows certain brain functions, enabling it to reduce anxiety, relieve stress, and improve sleep. Drinking it quells an emerging inner monster and brings about a calmer, Bruce Banner state of mind.

Green tea contains about 30-50mg of caffeine per 8oz cup. Higher temperatures and longer steeping times both increase the amount of caffeine released into the liquor.

Brewing Recommendations
Brewing Recommendations
Serving Size: 3-5g per 100ml of purified water.
Ideal Brewing Vessel: Porcelain tea pot or gaiwan; or high-fired, low profile thin clay teapot.
Steeping: Boil water to 175F/79C and then wait for the water to stop bubbling before pouring the water down the inside of the brewing vessel, not directly on the leaves. Brew for 60 seconds, then replace the lid and pour the liquor into a gong dao bei (fairness pitcher) before apportioning into tea cups. Brew a second time for only 30 seconds because the leaves are now fully open. Brew a third time for 2+ minutes at a lower water temperature (160F/71C).
Cold Brew: 5g (3 generous pinches) per 450ml of cold water. Refrigerate overnight.
